In the cup
The cup opens with notes of jasmine and fresh blueberry, carried by a soft acidity. As it cools, apricot and brown sugar emerge, and the blueberry acidity grows more pronounced. A lingering Earl Grey aftertaste develops throughout. While we recommend a resting period of four to six weeks, the coffee can be enjoyed from week one onwards — though we suggest avoiding the period between weeks three and four.
About the bean
Eva Gotiti, a small 2-hectare washing station established in 2022 in Gedeb, punches above its weight with coffees that do the same. Each season, around 900 subsistence farmers deliver approximately 500–600 tonnes of cherry to the station for processing. Once there, the cherries are cleaned to remove debris, washed, pulped, and fermented for 12–16 hours. They're then washed a second time and dried on raised beds for 10–14 days before being packed and stored.
