The scale gives producers close control over their harvests, allowing them to pick only the ripest cherries. After handpicking, cherries are delivered to Muthua-ini Factory, a wet mill operated by the Mutheka Farmers Cooperative Society, where they are sorted, depulped, fermented, and washed.
