It's quickly becoming a standout in the Baho network, producing consistently excellent washed and natural lots, and has transformed into what Emmanuel Rusatira calls Baho's hub for innovation. Hand-harvested ripe cherries are floated to sort for density and quality, then partially depulped to remove the outer skin and around 50% of the mucilage.
